Layers of Italian sponge soaked in espresso, zabaglione whipped over heat until it holds, and mascarpone folded through by hand. Dusted with cocoa just before it leaves the kitchen, so the top stays dark rather than going damp.

Made in 6", 8" and 10" sizes, and also cut by the slice at the counter. Keep it refrigerated and take it out twenty minutes before serving — cold flattens the coffee, room temperature brings it back.

Contains wheat, dairy, eggs and coffee; made in a kitchen that also handles tree nuts. Order three days ahead for a specific size, or ask what is in the case today.
