A light lemon mousse set on almond sponge, with a layer of lemon curd cooked down until it is sharp rather than sweet. Finished with a thin glaze so it slices cleanly and holds its edge on the plate.

Made in 6", 8" and 10" sizes, and available by the slice. It is the cake people order when the meal before it was heavy — it reads as dessert without sitting on top of dinner.

Contains wheat, dairy, eggs and almonds. Keeps two to three days refrigerated; best served cool but not cold.

The mousse is stabilised only as much as it needs to be, so it collapses gently on the fork instead of bouncing. The curd underneath is cooked with whole eggs and butter and left sharp; if it tasted like lemonade it would disappear under the cream.

It travels well and cuts cleanly straight from the fridge, which makes it a sensible choice for an event where the cake has to sit on a table for an hour before anyone touches it.
