What goes into our baking

Everything here is made in one kitchen, which means the same flour, butter and chocolate turn up across the whole list. Below is a plain summary of what we use, so you can check before you order. If you need certainty about a specific allergen, ask at the counter — we would rather answer the question twice than get it wrong once.

Staples

Unbleached wheat flour, butter, whole eggs, whole milk, 35 % cream, cane sugar, fine sea salt, fresh yeast, vanilla, dark and white couverture chocolate, ground almonds and hazelnuts, seasonal fruit and citrus.

Common allergens

Gluten — present in all cakes, pastries and cookies unless a product is specifically labelled otherwise. Dairy — butter and cream are used throughout. Eggs — used in sponges, mousses and custards. Tree nuts — almonds and hazelnuts are used daily; traces are possible in anything from the same kitchen. Soy — present in some chocolate couverture.

Dietary options

A small number of gluten-friendly and eggless cakes are made to order with a few days' notice. Because everything is produced in a single kitchen, we cannot promise an allergen-free environment, and we say so plainly rather than putting a sticker on it.

Storage

Mousse cakes, cheesecakes and flans keep in the fridge for two to three days and are best eaten at room temperature — take the cake out twenty minutes before serving. Croissants and danishes are at their best on the day; after that, five minutes in a hot oven brings them back. Granola, jams and spiced nuts keep for months unopened.

Where our ingredients come from

Flour, butter, eggs and cream come from suppliers we have used for years and are delivered several times a week rather than stockpiled. Chocolate is couverture, not compound. Fruit follows the season, which is why the flan on the counter in July is not the one you will find in December. Nothing here contains hydrogenated fat, and we do not use frozen pre-made shells or fillings.

Labelling

Every product in the case is labelled with its name and its main allergens. If a label is missing or you want the full ingredient list for something specific, ask and we will read it out from the production sheet.
